Shrimp Ceviche

this recipe has been around since i was born. my mom is to thank - it’s basic, flavorful, delicious and fast to make! i’ve been tapping into my mom’s recipes more and more because i want my kids to grow up eating the same foods i did with real, whole ingredients. ceviche is one of my favorites.

in a large pot, bring water to boil and put the shrimp in for a few seconds. dispose the water and rinse the shrimp with cold water. in another bowl, add the lime juice of 5 limes, avocado oil and the shrimp. cover up with lid, put it in the fridge and let it soak while you dice up the onions, tomatoes, serranos and cilantro. once the veggies are done, take out the shrimp from the fridge and dice it. incorporate everything in the same bowl of the shrimp and add salt to taste.

1 lbs shrimp

1/2 red onion

1/4 sweet onion

1 1/2 tomatoes

5 limes (juice)

a bunch of fresh cilantro

3 chile serranos

1 tbs avocado oil

salt to taste
